Many people will remember Fleur as the award-winning restauranteur of Olivers in Clyde and Fleur’s Place in Moeraki.  In this interview, Fleur talks with Joan Lawrence about her life growing up and how her early years shaped her culinary journey.  Her first experience in the hospitality industry was on the West Coast where she managed to cook, run and hotel and start a family.  In 1965 she moved to Alexandra and then honed her cooking skills at Dunstan House in Clyde.  Following that were moves to Invercargill and Queenstown.  On her return to Clyde, Fleur bought Olivers and developed her ‘New Zealand Provencal’ style of cooking.  Cooking, however, was not Fleur’s only passion.  She discusses her interests in the environment, local history, the conservation of heritage buildings, and her election to the regional council.  Fleur was also instrumental in setting up the Cavalcade and took part for many years.
